Unfortunately this situation is not considered in the Rules of Golf. I believe there are a few different options that can be used. This, however, will depend on what particular system a Golf Club Committee applies to such forms of play. The two most common forms used are:
Each player receives strokes as per their respective score card. The fact that the strokes for a male and female player may vary on holes is irrelevant as strokes are allocated per hole on a number of factors including the level of difficulty for a male/female player.
The lowest handicap player goes down to scratch and the higher handicap player reduces his / her handicap by the same amount as the lower handicap player reduced his by going down to scratch.
It may be beneficial to ask the Golf Committee at your club which procedure they require to be used for such competitions at the club.
